Instructions
Step 1
Divide the ground beef into 8 equal portions (~62 g / 2.2 oz each). Roll each into a loose ball—don’t pack them tightly, as this helps keep them juicy.
Step 2
Use a cast-iron skillet or flat-top griddle and heat over medium-high until very hot. If making griddled onions, add them first with a small bit of oil and cook until softened, then push aside.
Step 3

Lightly butter the cut sides of the buns and toast them in the skillet until golden. Set aside.
Step 4
Place 2 beef balls on the skillet (don’t overcrowd). Using a heavy spatula or burger press, press each ball very firmly until it’s about ¼ inch thick. Season immediately with salt and pepper.
Step 5
Let cook without moving for about 1–2 minutes until the edges are brown and crispy. Flip, season the other side, and immediately place a slice of cheese on one patty. Place the second patty on top of the cheese to form a double stack.
Step 6
Spread sauces on the bun, add your preferred toppings, then place the burger stack inside. Serve immediately while hot.
